Lets Cook: White Chocolate Cheesecake

This is a firm favourite with my family and every Christmas I end up making this. Its a super simple and easy chilled cheesecake which is the perfect thing to bring to a family gathering or a party.

Ingredients:
100g Chocolate Digestive Biscuits
50g Butter (Unsalted)
50g Caster Sugar
225g Cream Cheese
142ml Double Cream
150g White Chocolate (you can replace this with milk or dark chocolate if you would rather that)
1 Teaspoon Vanilla Extract
You will also need a 7" Loose Bottomed Cake Tin

Crush the biscuits in a large bowl and in a small saucepan, over a low heat, melt the butter before mixing it in to the crushed up biscuits.
Press this mixture into the base of cake tin and leave to chill in the fridge.
In a small sauce pan add a small amount of boiling water and then a heatproof bowl to create a Ban Marie. In this Ban Marie carefully melt the white chocolate and set aside to cool slightly.
Stir the sugar in to the cream cheese and in another bowl whip the cream and vanilla extract before gently folding it into the cheese and sugar.
Slowly pour the cooled chocolate into this cream cheese mix and fold it in.
Remove the base from the fridge and spread the cream cheese mixture over it so it is level.
Place the cheesecake in the fridge and chill it overnight before serving.
